O mercado hoteleiro ao longo dos anos tem vindo a crescer cada vez mais, e com isso aumentam também as suas exigências e desafios. Um dos maiores desafios da atualidade é a sustentabilidade na hotelaria e para tal, é usado nesta dissertação um caso de estudo de Portimão. O objetivo geral é entender quais são os principais desafios de sustentabilidade na hotelaria de 3, 4 e 5 estrelas, em Portimão, na ótica dos hoteleiros do concelho. Em consonância, procura-se determinar quais as principais estratégias e medidas sustentáveis adotadas pelas unidades hoteleiras de Portimão visando perspetivar quais aquelas que potenciam o desenvolvimento da hotelaria portimonense, de acordo com os princípios da sustentabilidade.
Do ponto de vista metodológico, a presente investigação inicia-se com um enquadramento teórico que destaca a interconectividade entre sustentabilidade e turismo, nomeadamente, entre sustentabilidade e hotelaria. Segue-se um estudo de caso assente quer num inquérito por entrevista, a associações diretamente ligadas ao turismo, quer num inquérito por questionário aos diretores hoteleiros. Por conseguinte, com base nas respostas obtidas das associações e dos diretores hoteleiros foi possível concluir que a sustentabilidade ainda é um domínio pouco explorado, uma vez que as medidas aplicadas ficam largamente aquém do desejável.
Os principais resultados da investigação evidenciam que em medidas como o impacto ambiental destacam-se as medidas básicas de poupança de energia, seguindo-se medidas incentivadoras de reciclagem e gestão do desperdício. Relativamente ao impacto social salienta- se a formação e desenvolvimento profissional e a medida de gestão da diversidade. Tendo em conta o impacto económico, enfatiza-se o benefício financeiro, o reconhecimento no mercado e consequentemente maior competitividade. Adicionalmente, as respostas fornecidas nos questionários e na entrevista vão ao encontro com as conclusões retiradas no estudo das empresas (Business Operations) que têm a valia de contribuir para a sustentabilidade.
The hotel market over the years has been growing more and more, and with that, its demands and challenges also increase. One of the biggest challenges today is sustainability in the hotel industry and for that, a case study of Portimão is used in this dissertation. The general objective is to understand what are the main sustainability challenges in 3, 4 and 5 star hotels in Portimão, from the perspective of hoteliers in the municipality. Accordingly, it seeks to determine the main sustainable strategies and measures adopted by the hotels in Portimão, in order to put into perspective which ones enhance the development of hotels in Portimão, in accordance with the principles of sustainability. From a methodological point of view, this research begins with a theoretical framework that highlights the interconnectivity between sustainability and tourism, namely between sustainability and hospitality. This is followed by a case study based either on an interview survey, to associations directly linked to tourism, or on a questionnaire survey to hotel directors. Therefore, based on the responses obtained from the associations and hotel directors, it was possible to conclude that sustainability is still an underexplored area, since the measures applied fall far short of what is desirable. The main results of the investigation show that in measures such as environmental impact, basic energy saving measures stand out, followed by measures to encourage recycling and waste management. Regarding the social impact, training and professional development and the diversity management measure are highlighted. Taking into account the economic impact, the emphasis is on the financial benefit, recognition in the market and consequently greater competitiveness. Additionally, the answers provided in the questionnaires and in the interview are in line with the conclusions drawn in the study of companies (Business Operations) that have the value of contributing to sustainability.
