Com o crescimento exponencial do turismo e do setor hoteleiro, o apelo ao desenvolvimento sustentável assente na produção e consumo sustentáveis torna-se determinante.
A Região Demarcada do Douro (RDD), por ser uma área de interesse nacional e internacional, classificada pela UNESCO, deve ser protegida e preservada tanto pelos que nela habitam e exercem as suas profissões como por quem a visita. Deste modo, o objetivo geral da dissertação é o de identificar os contributos da hotelaria para a preservação ambiental e patrimonial da RDD e os objetivos específicos são os de: refletir sobre a temática da sustentabilidade com destaque para o turismo e a hotelaria; identificar as políticas nacionais e internacionais que abarquem a sustentabilidade e a preservação ambiental; e apresentar boas práticas de sustentabilidade ambiental que possam ser seguidas pelo setor hoteleiro.
A investigação empírica assentou num estudo exploratório de natureza fundamentalmente quantitativa. Foi realizado um inquérito por questionário, online, aos hotéis de 3, 4 e 5 estrelas da RDD ao qual se obteve 27 respostas válidas. O tratamento dos dados foi realizado através do software de análise de dados IBM SPSS Statistics, que permitiu fazer análises de frequências descritivas e também análises cruzadas entre variáveis. Os resultados obtidos permitem concluir que as medidas desenvolvidas pelos hotéis de 3, 4 e 5 estrelas da RDD inquiridos são ainda modestas. Destaca-se, no entanto, que de uma maneira geral existe a preocupação em tentar incorporar medidas de sustentabilidade.
With the exponential growth of tourism and the hotel sector, the call for sustainable development based on sustainable production and consumption is becoming decisive. As a UNESCO-listed area of national and international interest, the “Região Demarcada do Douro” must be protected and preserved both by those who live and work in it and by those who visit it. Therefore, the general aim of this dissertation is to identify the contributions of the hotel industry to the environmental and heritage preservation of the Douro Demarcated Region, and the specific aims are: to reflect on the theme of sustainability, with an emphasis on tourism and hotels; to identify national and international policies that cover sustainability and environmental preservation; and present good environmental sustainability practices that can be followed by hotels in the region. The empirical research was based on an exploratory study of a fundamentally quantitative nature. An online questionnaire was sent to 3, 4 and 5-star hotels in the RDD, to which 27 valid responses were obtained. The data was processed using IBM SPSS Statistics data analysis software, which made it possible to carry out descriptive frequency analyses and also cross-analyses between variables. The results obtained lead us to conclude that the measures developed by the 3, 4 and 5 star hotels in the RDD surveyed are modest. It should be noted, however, that in general there is concern about trying to incorporate sustainability measures.
