- AB1258HPR pilot study: does a mediterranean dietbased weight loss programme improve health outcomes in overweight older women with knee osteoarthritis?Publication . Caixinha, Mónica; Mateus, Maria Palma; Pais, Sandra; Pinto, EzequielOsteoarthritis (OA) is one of the leading causes of pain and disability among older adults, particularly women. Pain and mobility disability are major consequences of knee OA which and can interfere with the functional autonomy of elderly and thus, making it difficult to perform activities of daily living. Evidence suggests that obesity is strongly linked to knee OA and that nonpharmacological therapy should be based on physical activity and weight loss in case of overweight and obesity. A positive relationship between adherence to the Mediterranean diet and health outcomes has been widely discussed in scientific literature, including its potential benefits in weight loss.
- Ageing and nutritional therapy adherence in type 2 diabetesPublication . Pinto, Ezequiel; Braz, NidiaThe prevalence of diabetes increases with age, which is also a determinant of nutrition therapy adherence. This descriptive study was conducted in a non-random sample of 66 patients aged between 47 and 75 years (M=61.5; SD=8.0) receiving health care in a Diabetes Clinic in the municipality of Faro, in the Portuguese region of the Algarve. We aimed to assess the association between age and the clinical characteristics of type 2 diabetes and to analyze the perceptions regarding the barriers to an adequate diet. Glycated hemoglobin (HbA1c) (r=-0.372, P<0.001) showed a negative correlation with age, suggesting that older patients have a better glucose control. Older age is also correlated with a higher number of daily meals (r=0.263) and lower intake of energy (r=-0.334), protein (r=-0.249), sugars (r=-0.301), and water (r=-0.223). Forty-six patients (69.7%) had a mean excess energy intake of 384 kcal (SD=630.2), when compared with individual nutritional energy estimated requirements. Excess energy intake was uncorrelated with age (r=-0.138, P=0.269). Older patients also seem more confused with the nutrition information they received (r=0.248) and feel that they need more advice on what is a proper diet (r=0.242). Nutrition education interventions in this population must be tailored in order to address these factors
- Alimentação e nutrição na pessoa idosaPublication . Mateus, Maria; Popa, Cezara; Correia, Maria Marta; Pinto, Ezequiel; Meireles, Manuela; Braz, Nidia; Pais, SandraIntrodução: Com o aumento da esperança média de vida, aumenta a incidência e a prevalência de condições patológicas crónicas. Estas situações podem ser condicionadas pela alimentação e acarretam consequências no estado nutricional. Estas condições podem ser atenuadas com recurso a estratégias alimentares adequadas. Para melhorar a qualidade de vida da população idosa institucionalizada é fundamental a formação e a capacitação dos técnicos de instituições geriátricas sobre as principais condições que podem comprometer o estado nutricional dos seus utentes - desidratação, demência, disfagia e presença de doenças metabólicas crónicas, de forma a assegurar corretamente as suas necessidades nutricionais. Metodologia: A formação consistiu em sessões de 1h dinamizadas por nutricionistas com as seguintes temáticas: “Alimentação no idoso com demência, disfagia e hidratação” e “Doenças Metabólicas: Obesidade, Diabetes mellitus, Doenças cardiovasculares e Hipertensão arterial”. Abordaram-se as implicações destas situações no estado nutricional e apresentaram-se estratégias alimentares e nutricionais, para uma ingestão alimentar e hídrica adequadas. No final aplicaram-se questionários de avaliação dos conhecimentos adquiridos e da qualidade das formações. Resultados: A participação e aceitação nas 2 sessões realizadas (30 formandos) foi bastante positiva. A classificação global das sessões revelou resultados médios com 15,4% dos formandos a classificarem as formações como “Muito boa”, 76,9% “Boa” e 7,7%. “Suficiente”. Em média, 80% dos formandos atingiram os objetivos da sessão, conseguindo identificar, pelo menos, 4 estratégias para melhorar as situações apresentadas. Conclusão: Estas formações permitiram sensibilizar e capacitar os técnicos para a importância da alimentação como fator promotor de um envelhecimento com mais qualidade e vida.
- An assessment of the psychometric properties of the Brief Sensation Seeking Scale and its prediction in safety performance in a Portuguese adult samplePublication . Sousa, Cátia; Sousa, António; Pinto, Ezequiel; Gonçalves, GabrielaThis study aims to present the psychometric properties of the Brief Sensation Seeking Scale in a Portuguese sample. Three studies were performed: the first study provides psychometric evidence pertaining to its reliability and factor structure, an analysis of the measurement invariance of the BSSS across gender and age, and an examination of the differences scores on the scale regarding gender, age and marital status (n = 526); the second study consists of an assessment of convergent, discriminant and postdictive validity (n = 240); and the third study includes a test-retest of the BSSS (n = 72). A four-factor model yielded the best fit to the data with good reliability and validity. The scale showed non-invariance between genders and between ages, which makes it less generalizable and susceptible to different populations. Convergent validity with the variables risk taking, need for arousal and extraversion, and discriminant validity between neuroticism, agreeableness and conscientiousness, were demonstrated. The scale presents good temporal stability and represent an important tool for psychological assessment of personality and behavior, and as a predictor of safety performance.
- Development of an online holistic standardized recipe: a design science approachPublication . Silvestre, Daniela; Serra, Manuel; Afonso, Carlos M.; Pinto, Ezequiel; Almeida, CarlosConcerns around healthy and sustainable food, particularly regarding the standardization of production, cost control, and revenue maximization, are issues challenging food and beverages researchers and professionals. There are some available models to create standardized recipes for food and beverages, but they are weak in holistic terms from the point of view of management and legally required information. The purpose of this study was to develop an artifact, an online holistic standardized recipe, to allow the management of information in terms of recipes, costs, allergens, sustainability, nutrition facts, and menu pricing strategies. The research approach was conducted using a design science research methodology developed in two cycles. The artifact was produced from a literature review conducted to define the design principles, and it was evaluated across exploratory focus group and field study phases. The primary outcome of this research was the development of an online holistic standardized recipe. The artifact was considered relevant and useful by the stakeholders participating in the exploratory focus group and field study. However, studying the edible portion and the average weight of the recipe ingredients is necessary for the artifact to become more robust. The paper provides new insights and practical guidelines for academics and professionals in the food and beverage industry.
- Do patients value nutritional therapy? A quantitative study in type- 2 diabetes patientsPublication . Pinto, Ezequiel; Braz, Nídia; Nascimento, Tânia; Gomes, EuricoType 2 diabetes patients’ adherence to pharmacotherapy is higher than adherence to nutritional therapy or lifestyle change behaviours, and patients do not value nutritional therapy in the same level as they value other types of interventions. This study aimed to analyse the value that T2DM patients place on nutritional therapy and to identify perceived barriers to nutritional therapy adherence. Methods: A non-random sample of 62 patients receiving health care in a Diabetes Clinic in the municipality of Faro, in the Portuguese region of the Algarve, was interviewed with a semi-structured protocol regarding sociodemographic characteristics, lifestyle, physical activity, and dietary habits. Additional data were collected from the patient’s clinical files and by conducting anthropometric assessment using standard methods.

Nesta atividade foram criadas sessões de capacitação com o objetivo de sensibilizar e capacitar técnicos, cuidadores e idosos da comunidade para a importância da alimentação como fator promotor de um envelhecimento mais ativo e com mais qualidade e vida. As temáticas abordadas nestas sessões foram as seguintes:” Risco nutricional, necessidades nutricionais no idos e estratégias alimentares”; “Alimentação no idoso com demência, disfagia e hidratação” e “Doenças Metabólicas: Obesidade, Diabetes mellitus, Doenças cardiovasculares e Hipertensão arterial” e “Alimentação saudável”. Nas quais se abordaram as implicações destas situações no estado nutricional e apresentaram-se estratégias alimentares e nutricionais, para uma ingestão alimentar e hídrica adequadas.
- Health behaviours as predictors of the Mediterranean diet adherence: a decision tree approachPublication . Bôto, Joana Margarida; Marreiros, Ana; Diogo, Patricia; Pinto, Ezequiel; Mateus, Maria PalmaObjective: This study aimed to identify health behaviours that determine adolescent's adherence to the Mediterranean diet (MD) through a decision tree statistical approach. Design: Cross-sectional study, with data collected through a self-fulfilment questionnaire with five sections: (1) eating habits; (2) adherence to the MD (KIDMED index); (3) physical activity; (4) health habits and (5) socio-demographic characteristics. Anthropometric and blood pressure data were collected by a trained research team. The Automatic Chi-square Interaction Detection (CHAID) method was used to identify health behaviours that contribute to a better adherence to the MD. Setting: Eight public secondary schools, in Algarve, Portugal. Participants: Adolescents with ages between 15 and 19 years (n 325). Results: According to the KIDMED index, we found a low adherence to MD in 9 center dot 0 % of the participants, an intermediate adherence in 45 center dot 5 % and a high adherence in 45 center dot 5 %. Participants that regularly have breakfast, eat vegetable soup, have a second piece of fruit/d, eat fresh or cooked vegetables 1 or more times a day, eat oleaginous fruits at least 2 to 3 times a week, and practice sports and leisure physical activities outside school show higher adherence to the MD (P < 0 center dot 001). Conclusions: The daily intake of two pieces of fruit and vegetables proved to be a determinant health behaviour for high adherence to MD. Strategies to promote the intake of these foods among adolescents must be developed and implemented.
